  • 1 cup canned pumpkin (not pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup sweetened dried cranberries
  • 1/2 cup chopped pecans
  • Coarse sugar, if desired
