Stir goat cheese, chopped pistachios, panko breadcrumbs, scallion, and lemon zest in a small bowl, set aside.
Pat dry the halibut fillets with a paper towel. Brush the top of the fillets with olive oil, season with garlic powder and salt.
Coat the halibut fillets with the pistachio mixture, pressing to help it adhere. Air fry for 6 to 10 minutes or until the fish flake easily with a fork.
Serve with lemon wedges and your side of choice. Enjoy!
