1 cup white sugar
2 tablespoons cornstarch
1 cup boiling water
2 ½ quarts fresh strawberries, hulled
2 (8 inch) pie shells, baked
1 (3 ounce) package strawberry-flavored gelatin mix
Whisk sugar and cornstarch together in a saucepan until completely blended. Pour in boiling water and cook over medium heat until mixture thickens and is clear in color, 5 to 10 minutes.
Remove from heat and stir in gelatin mix until smooth. Let mixture cool to room temperature, 15 to 30 minutes.
While the mixture is cooling, place strawberries into baked pie shells with the points facing up.
Pour cooled gelatin mixture over strawberries and refrigerate until set, about 2 hours.
